Ingredients

Salad:
1 whole-grain flatbread
1¼ c. mixed greens
¼ c. toasted walnuts
2 Tbs. dried cranberries
¼ c. fresh sliced pears
1½ Tbs. crumbled goat cheese
Olive oil

Raspberry Vinagrette Dressing:
¼ c. extra virgin olive oil
Sea salt to taste
Raspberry vinaigrette
Honey to taste

Directions

Preheat oven to 350°F. Lightly brush whole-wheat flat bread with olive oil to coat and place in oven for 3 to 5 minutes to toast until crispy. Set aside. Toast walnuts in a pan on a medium flame. Set aside. In a bowl, mix together the mixed greens, walnuts, dried cranberries and pears. Pour a light coat of raspberry vinaigrette dressing over mixed salad mixture and mix together. Layer salad mixture on top of toasted flatbread and sprinkle crumbled goat cheese on top. Pour dressing ingredients in a bowl, whisk together and serve.
