Savor the freshness of grilled chicken and vibrant veggies nestled in crisp bibb lettuce. Enhanced with a zingy ginger dipping sauce, these lettuce wraps are a delightful blend of flavors and textures, perfect for a light yet satisfying meal.

Ingredients

  • Lettuce Wraps
  • 8 bibb lettuce leaves

  • 4 grilled boneless chicken breasts

  • 1 red bell pepper, sliced

  • 1 yellow bell pepper, sliced

  • 2 c. mandarin oranges, drained

  • 2 c. bamboo shoots

  • 2 c. bean spouts

  • 4 scallions, sliced

  • Garlic powder, to taste

  • Salt, to taste

  • Black pepper, to taste

  • Light Asian Ginger Dipping Sauce
  • 2 cloves of minced garlic

  • 1/3 c. rice vinegar

  • 1 3/4 Tbs. fresh minced ginger root

  • 3/4 c. olive oil

  • 1/2 c. low sodium soy sauce

  • 3 Tbs. honey

  • 1 Tbs. toasted sesame seeds

Directions

  • Wash and dry lettuce leaves.
  • Season chicken breasts on both sides with garlic powder and salt and black pepper to taste. Grill until chicken breasts are cooked completely through on a grill pan.
  • Slice grilled chicken breasts into long strips. Arrange sliced chicken, vegetables and mandarin oranges in the lettuce leaves before wrapping the ingredients up.
  • Mix the ingredients in the dipping sauce to serve with the wraps.
