Ingredients
Extra-virgin olive oil for greasing
1 cooked chicken breast, thinly sliced
⅔ cup store-bought Kansas
City-style barbecue sauce
1 ball (about 14 oz) pizza dough, homemade (page
10) or store-bought, at room temperature
¾ cup shredded low-moisture mozzarella cheese
¼ cup shredded sharp cheddar cheese
¼ cup sliced green onions
Directions
- Place a rack in the center of the oven and preheat the oven to 500°F. Lightly coat a heavy-duty rimmed baking sheet with olive oil.
- Stretch or roll the pizza dough into a 12-inch round and place on the prepared baking sheet. In a medium bowl, toss the chicken with ⅓ cup of the barbecue sauce. Spread the remaining ⅓ cup barbecue sauce on the dough, leaving a ½-inch border of dough uncovered. Arrange the chicken on top in an even layer, then top with the mozzarella and cheddar cheeses.
- Bake until the crust is golden and the cheese is just beginning to brown in spots, 10-15 minutes. Remove the pizza from the oven. Let cool for 5 minutes.
- Sprinkle the green onions evenly over the top. Cut into wedges and serve.
