Ingredients

1 deep dish pie crust
2 medium zucchini
1 garlic clove, minced
2 Tbsp. cooking oil
3 eggs, beaten
1 c. whipped (or cream style) cottage cheese
¾ c. milk
½ c. shredded mozzarella
1 medium onion, diced

Directions

Pre-bake pie crust on pre-heated cookie sheet in 450° oven for six minutes. Remove crust and reduce temperature to 325°. Saute zucchini, onion and garlic in hot oil until tender. Cool slightly. Spoon zucchini mixture into crust. In a bowl, combine cottage cheese, eggs and milk. Spoon over zucchini. Bake in a 325° oven on pre-heated cookie sheet for 45 minutes. Sprinkle mozzarella cheese on top and bake for five more minutes, or until knife inserted into center comes out clean.
