2/3 c. prepared quinoa (or short grain brown rice)
2/3 c. prepared black beans
½ c. chopped spinach
1/3 c. diced yellow bell pepper
1/3 c. grated carrots
¼ c. finely diced red radish
¼ c. thinly sliced scallions
1 head of Boston lettuce


Cook and cool the quinoa and beans. Chop the vegetables. Combine vegetables with rice and beans. Add roughly 1/3 cup of Citrus Cilantro Dressing (recipe appears elsewhere on the site), until mixture is well coated. Serve ¼ cup of salad in 1 Boston lettuce leaf.


Serves 5 with 2 lettuce wraps per serving
